I was skeptical about gluten free cookies being dry, but these are actually buttery and soft with a rich dark chocolate ganache that has just the right amount of peppermint kick. The mint isn’t overpowering either, so it’s easy to eat two without it feeling like toothpaste.

The peppermint ganache in the middle is the star here—it’s rich without being overpowering, and the buttery cookies hold it together perfectly. I’ve already finished half the bag in one sitting, and they’re dangerously easy to keep reaching for.

I’m not usually a cookie person, but the peppermint in the ganache is what got me—it’s bold without being toothpaste-y. The cookies themselves are soft and buttery, and they held up perfectly with my afternoon coffee. Two of these and I’m set for the day.
